Gelatin is a food product in the form of a light yellow powder, tasteless and odorless. It is obtained through partial hydrolysis of collagen found in animal skin, using acid treatment. Gelatin possesses several properties—such as gelling, water absorption, film formation, thickening, and clarification—which make it suitable for a wide range of applications.

Gelatin is widely used in confectionery (jellies, marmalades, candied fruits, chewing gum), as well as in meat or fish dishes (aspic, jellied meat, cold cuts). It is also used in ice cream to prevent ice crystal formation and assist in the protein denaturation process.
