Carrageenan is a natural gelling agent obtained from red seaweed through an extraction process, followed by purification from organic and other impurities through repeated precipitation, filtration, and washing with water and alcohol. Depending on the degree of purification, carrageenans are classified as refined or semi-refined.

Carrageenan is widely used in the following products: processed cheeses, condensed milk, ice cream, fruit fillings and toppings, sauces, confectionery, meat and sausage products, as well as in beer.
